Diet Coke Chicken

A few ladies asked for the recipe for the diet coke chicken and so here you go:

Mini chicken fillets or diced chicken breasts
Can of Diet Coke
2 onions
1 pepper
Worcestershire Sauce

Cook chicken in fry light and add chopped onion. Sprinkle with oxo cube and add diced pepper. Once chicken is almost cooked add 6 tablespoons of passata to diet coke and mix well, then pour over chicken in a pot. Add a dash of Worcestershire sauce. Bring to the boil then reduce heat and simmer for 15-30 minutes until the sauce thickens. Serve while hot.

I served mine with home made egg fried rice and it was delicious.

  1. Thanks Niamh, I think I might try that as it sounds lovely and not to much work involved. Will let you know how it turned out. Aiveen.

  2. Must try it. Sounds easy but whats passata?

  3. Let me know how you get on ladies.
